APPEARANCE Medium intensity of colour, with a bright youthful crimson red hue.
NOSE Displaying an enticing bouquet of mulberry and stewed plums, tobacco and subtle spicy oak, the nose displays satisfying complex aromas at this stage in its evolution and will develop typical fruitcake and earthiness with proper cellaring.
PALATE Medium-bodied in weight, this Merlot displays balanced acidity, ripe sappy fruit, and fine dusty tannins. Cherry, spice and a touch of plum characterise the fruit profile with a hint of cedary oak adding complexity to the mid-palate. The Cirko V Merlot is dry and elegant in the French style. It is made using classic traditional techniques including hand plunging, resulting in a unique wine in the ready-to-drink Cirko V style. Deliberately made to be enjoyed with food, this wine relies on flavour and complexity rather than sheer weight and power for its appeal, in the regional French tradition.
CELLARING A great drink now or will gain further complexity with proper short/medium-term cellar ageing. Our decision to bottle under screw cap ensures our Merlot will star on tables in pristine condition.
PARTNERING FOOD This is not a big huge alcoholic style of Merlot displaying high residual sugar levels. It is a more subtle and elegant wine, able to accompany a broad range of cuisines with ease. Simple herb-grilled meats and pork dishes would partner this wine well and its good structure would complement Italian-style pastas and risottos beautifully. And with a little bit of age, medium-rare tuna would satisfy the adventurous!
THE VARIETY Merlot hails from south-west France as the major grape variety of Bordeaux, where it is usually blended with Cabernet Sauvignon and Cabernet Franc to produce that region’s wonderful ‘claret’ styles. It has many flavour and structural similarities with Cabernet Sauvignon but is softer and with more flesh in the middle palate, displaying a range of flavours from herbaceous to mulberry. Merlot is now widely planted throughout both the New and Old Worlds.
